Our Pepper Steak Stir Fry combines Asian wok cooking with a hint of Mexican flavor. This "East meets South of the Border" quick skillet main dish is a novel meal sure to bring you raves.
What You'll Need
- 1/4 cup vegetable oil
- 2 pounds boneless steak, sliced into thin strips
- 1 large onion, cut into 3/4-inch angled slices
- 3 green bell peppers, cut into strips
- 1/2 pound mushrooms, sliced
- 1 1/2 cup mild picante sauce
- 1 cup water
- 1/3 cup soy sauce
- 3 tablespoons cornstarch
- 1/4 teaspoon garlic powder
What to Do
- In a large skillet or wok, heat oil over high heat until moderately hot; saute steak and onion for about 5 minutes, stirring often.
- Add peppers and mushrooms, and cook about 5 more minutes, stirring often, until vegetables are tender.
- In a medium bowl, combine picante sauce, water, soy sauce, cornstarch, and garlic powder; add to steak and vegetable mixture. Cook 2 to 3 more minutes, or until sauce thickens, stirring occasionally.
Notes
Serve Pepper Steak Stir Fry over rice or fried noodles. For an Asian twist, use ginger or five-spice powder; for Mexican, add a touch of chili powder or cumin; for Mediterranean, add a little oregano. You can also use different veggies for variety. And here's a hint to make the meat easier to slice: Place it in the freezer until firm.
