    Toss Together Corn Salad

    The fun part of this salad is that you change it every time, depending on what you bring along or can get at the campground's produce stand. Add peppers one time, cucumbers another, and sugar snap peas the next. Before you know it, you'll be going camping just so you can make this salad!

    What You'll Need

    • 2 (15-1/4 ounce each) cans whole kernel corn, drained
    • 1/4 cup Italian dressing
    • 1 small green bell pepper, finely chopped
    • 1 small red pepper, finely chopped

    What to Do

    1. In a medium bowl, combine all ingredients; mix well. Cover and chill at least 1 hour before serving.
       

    Notes

    You can make this in advance, but if you plan to make it on the camping trip, be sure to bring a good old-fashioned hand-operated can opener with you.

    I think this would be good with the "Mexican" corn too.

    I make this with Zesty Italian dressing and add red onion and celery seed. Very good.
