Bean Bread Spread

Try whipping up this one and you'll be doing some California dreamin' before you know it!
What You'll Need
- 1 loaf Italian bread
- 1/2 cup olive oil, plus extra for brushing on bread
- 1 can (15 to 16 ounces) garbanzo beans (chick peas), drained
- 3 to 5 garlic cloves, coarsely chopped (to taste)
- 1 tablespoon fresh lemon juice
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon chili powder
- 1/4 cup coarsely chopped fresh parsley for garnish
What to Do
- Preheat the oven to 375°F.
- Slice the bread in half lengthwise, brush the cut side of each half with olive oil, and bake for about 20 minutes or until golden brown.
- Meanwhile, in a blender jar, place the 1/2 cup olive oil, garbanzo beans, garlic, lemon juice, salt, pepper, and chili powder, in that order. (It will blend better.) Purée, mixing frequently, until it becomes a paste.
- Spread the paste on the bread, garnish with the parsley, and slice into serving-sized pieces.
- Makes about 1-1/4 cups.
