Black Bean Fritters

So, you thought fritters had to be fried in lots of oil? Uh uh! You can cook 'em up just fine in a skillet with a little oil. And not only are we helping ourselves cut down on fat, but the black beans are full of good-for-us protein, too!
What You'll Need
- 1 3/4 cup all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 4 egg whites, beaten
- 1 cup salsa
- 2 (16-ounce) cans black beans, rinsed and drained
- 1 tablespoon canola or vegetable oil, plus extra if needed
What to Do
- In a large bowl, combine flour, baking powder, salt, and pepper. Add egg whites and salsa; mix well then stir in black beans.
- Place 1/2 teaspoon oil in a large skillet and heat to medium-high heat. Pour 1 teaspoon batter per fritter into skillet, cooking several fritters at one time, but not overcrowding them. Cook 1 minute then flip fritters and flatten with a spatula; cook 1 to 2 more minutes, or until browned on both sides. Repeat with remaining batter, adding more oil as necessary.
Makes about 5 dozen fritters.
Note
Serve with additional salsa and reduced-fat sour cream for dipping, if desired.

This sounds nice and filling. I'm going to cut it in half, though. A glass of skim milk would make a nice lo-cal protein compliment.
