Cheesy Onion Puffs

Our Cheesy Onion Puffs are an easy-to-make hors d'oeuvre; thanks to the shortcut of using ready-made frozen pastry sheets. Pass these party appetizers around warm, and watch them disappear.
What You'll Need
- 1 (17-ounce) box frozen puff pastry sheets, thawed (2 unbaked sheets)
- 1 (15-ounce) container ricotta cheese
- 2 cups (8 ounces) grated Cheddar cheese
- 1 onion, finely chopped (about 2 cups)
- 2 eggs, slightly beaten
- 1/2 teaspoon salt
- 2 pinches cayenne pepper
What to Do
- Preheat oven to 375 degrees F.
- Unfold 1 puff pastry sheet onto a 10- x 15-inch rimmed baking sheet.
- In a large bowl, mix together remaining ingredients, except second pastry sheet.
- Spread cheese-onion mixture onto unfolded pastry sheet.
- Unfold remaining puff pastry sheet and place over mixture.
- Bake 40 to 45 minutes or until golden. Cool slightly, cut into squares, and serve warm.
Notes
For even lighter puffs, you can use low-fat ricotta or Cheddar cheese. You can also cut down on the salt and add your favorite flavorings or fresh herbs.

So you unfold a pastry sheet and put it in the baking sheet and then you put the mixture on the UNfolded pastry sheet?

after unfolding one sheet, that still leaves you with one folded and one unfolded. spread the mixture on the unfolded sheet.
