Chilie Chicken Quesadillas

What You'll Need
- 1 1/4 cup salsa, divided
- 1 cup chopped cooked chicken breast
- 1 (4.5-ounce) can chopped green chilies, drained
- 2 tablespoon chopped fresh cilantro
- 1 teaspoon ground cumin
- 6 (7-inch) flour tortillas
- 1 1/2 cup (6 ounces) shredded Monterey Jack cheese with peppers
What to Do

Combine 1/2 cup salsa, chicken, and next 3 ingredients.
- Place 1 tortilla in a lightly greased skillet over medium-high heat. Immediately spoon about 1/6 of salsa mixture onto tortilla. Sprinkle with 1/4 cup cheese, and heat 1 minute. Fold in half; cook 30 seconds or until lightly browned. Turn; cook other side 30 seconds or until browned. Repeat with remaining tortillas. Cut each tortilla into 4 wedges. Top with remaining 3/4 cup salsa.
Notes
Slash your prep time for this appetizer by using frozen diced cooked chicken breast instead of cooking your own. This handy product comes in an 18-ounce package in the frozen food section of your supermarket. Just take out what you need for this recipe and seal the remaining frozen chicken in a freezer-safe zip-top plastic bag.
