French Onion Pickups

An anytime snack that combines the flavors of your favorite soup on a warm loaf of French bread. Toast up these savory French Onion Pickups anytime that you're looking for a "pick-me-up."
What You'll Need
- 2 tablespoons vegetable oil
- 2 onions, coarsely chopped
- 1/4 cup mayonnaise
- 1 large French bread, split in half lengthwise
- 1 (6 ounce) package Swiss cheese, sliced or shredded
What to Do

Preheat broiler.

In a large skillet, heat oil over medium-high heat. Add onions and saute until nicely browned; set aside.

Spread mayonnaise over cut sides of bread and broil about 6 inches from heat source until light brown and bubbly. Remove from broiler and cover each side with onions; top with cheese and broil for another 2 to 3 minutes, until cheese is melted. Cut at an angle into generous portions.
Notes
Cut these into bite-sized pieces for a quick hors d'oeuvre, or serve 'em as a go-along for steak.
