Greek Olive Cups

These Mediterranean treats stuffed with different olives, nuts, and cheese will have you believin' you're in Greece. Apolafsete, which means 'enjoy' in Greek!
What You'll Need
- 1 cup (4 ounces) shredded Cheddar cheese
- 1/2 cup chopped pimiento-stuffed olives
- 1/2 cup kalamata olives, pitted and chopped.
- 1/3 cup chopped pecans, toasted
- 1/3 cup pine nuts, toasted
- 2 tablespoons mayonnaise
- 2 (2.1-ounce) packages frozen mini phyllo shells
What to Do
- Preheat the oven to 375 degrees. Stir together first 6 ingredients. Remove phyllo shells from package, leaving them in trays.
- Spoon 1 heaping teaspoon olive mixture into each pastry shell; remove from trays, and place cups on baking sheets.
- Bake 12 to 15 minutes or until thoroughly heated. Serve immediately.
Notes
After filling cups in trays, place trays in resealable plastic freezer bags, and freeze up to 1 month. Remove cups from trays, and place on a baking sheet. Let cups stand 10 minutes before baking. Bake as directed in recipe.

I've been looking for something to make with olives. I recently discovered and I love relish at the Mediterranean bar at my grocery store. It was fantastic but way too expensive. But that got me to thinking why not make something similar with olives. And this looks like it would be pretty good even better
