Grilled Fajita Roll ups

When I go out, I love to make a meal on just appetizers! If you do, too, then why not make a bunch of appetizers on the grill? Fajitas are full of the stuff everybody loves, so make 'em a snack or make 'em a meal!
What You'll Need
- 8 eight-inch flour tortillas
- 8 thin slices (about pound) deli-style roast beef
- 8 thin tomato slices
- 8 very thin onion slices
- 1/2 cup (2 ounces) shredded Cheddar cheese, divided

Preheat the grill to medium heat.
- In the center of each tortilla, lay out a slice of roast beef, a slice of tomato, an onion slice, and about 1 tablespoon cheese. Roll up each tortilla, tucking in the sides while rolling. Place in a disposable 9" x 13" aluminum baking pan. Place the pan on the grill and cover; cook for 8 to 10 minutes, turning the tortillas occasionally until heated through, the cheese is melted, and the outsides are lightly browned.
Notes
Bring out the Tex-Mex taste even more by adding a few sliced jalapeño peppers to each roll-up and serving with salsa for dipping. Wow!
