Jalapeno Guacamole

- 4 cups
The perfect blend of spice, fresh flavor, and taste, this Jalapeno Guacamole is on fire! Get out your tissues because this guy will have the tears running down your cheeks.
What You'll Need
- 1 tomato chopped
- 3 ripe avocados, peeled and mashed
- 1/4 cup chopped onion
- 1 jalapeno pepper, chopped
- 1 tablespoon lemon juice
- 1 teaspoon salt
What to Do
- Reserve 1 tablespoon chopped tomato for garnish.
- Place remaining chopped tomato in a medium bowl. Add avocado and remaining 4 ingredients; stir well. Sprinkle with reserved tomato. Serve with tortilla chips.
Notes
I recommend seeding the fresh jalapeno pepper before chopping if you'd like to cut down on the fiery flavor of this guacamole. If you can take the heat, add the pepper-seeds and all!

I almost always use 2 jalapeno's in my salsa and guac. The secret of keeping them from burning all semblence of your tasetbuds off is to boil them for about 3 mins and then just remove the stems and chop. if you happen to get yur salsa too hot, add finely grated raw carrot to remove some of the fire.
