Light Apricot Wings

Light Apricot Wings are an easy party hors d'oeuvre. Who doesn't love wings that are glazed and crispy? Mmm mmm!
What You'll Need
- 3 pounds (about 12 to 15) chicken wings
- 1 (17-ounce) can apricot halves, drained
- 2 tablespoons ketchup
- 2 tablespoons vegetable oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon liquid smoke, optional (see Notes)
- 1/2 teaspoon hot pepper sauce, optional
What to Do
- Preheat oven to 425 degrees F.
- Split wings at each joint and discard tips; rinse, then pat dry.
- Combine remaining ingredients in a blender or food processor; blend until smooth.
- Place chicken wings in a single layer on a rack in a shallow baking pan; brush with apricot sauce.
- Bake about 30 minutes, until wings are brown and crisp, basting with sauce after 15 minutes.
Notes
- Liquid smoke is usually found in the condiment section of the supermarket.
- To give the wings a crispy glaze, put them under the broiler for a couple minutes after baking.
