This 14-minutes-to-make No Chop Antipasto Tray is such a crowd-pleaser because the tortellini, veggies, and pepperoni all blend together to make an appetizer that will have the whole gang full before you even bring out the meal.
What You'll Need
- 1 (9-ounce) package refrigerated spinach tortellini
- 1 (12-ounce) jar peperoncini, undrained
- 1 (16-ounce) package fresh broccoli florets
- 1 (16-ounce) package fresh baby carrots
- 1 (14-ounce) can quartered artichoke hearts, drained
- 1 (8.5-ounce) package sliced pepperoni
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
What to Do
- Cook tortellini according to package directions; drain. Drain peperoncini, reserving 3 tablespoons liquid.
- Arrange tortellini, peperoncini, broccoli, and next 3 ingredients on a large platter.
- Combine reserved pepper liquid, the mustard, and olive oil; stir well. Drizzle mustard mixture over antipasto; serve immediately, or cover and chill.
Notes
Watched pot won't boil? Place your saucepan over high heat, and cover it. This causes a quicker buildup of steam and pressure, resulting in a faster boil.
