Nutty Cheese Crackers

This is a lot of good tastes rolled into one, making great use of a Southern specialty: pecans!
What You'll Need
- 2 cup (8 ounces) shredded sharp Cheddar cheese
- 1 cup self-rising flour
- 3/4 cup finely chopped pecans
- 1/2 cup (1 stick) butter, softened
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
What to Do
- In a medium-sized bowl, combine all the ingredients.
- Using your hands, knead well until a soft dough forms. Shape into an 8-inch log about 2 inches in diameter. Wrap tightly in plastic wrap and chill for about 30 minutes, until firm.
- Preheat the oven to 350 degree F. Unwrap and cut the log into 1/4-inch slices and place on a rimmed baking sheet that has been coated with nonstick cooking spray.
- Bake for 20 to 25 minutes, or until golden. Let stand for 5 minutes before removing from the baking sheet.
- Serve warm, or allow to cool completely then store in an airtight container until ready to serve.
Makes about 2 dozen.
