Nutty Cheese Crackers

This is a lot of good tastes rolled into one, making great use of a Southern specialty: pecans!

What You'll Need

  • 2 cup (8 ounces) shredded sharp Cheddar cheese
  • 1 cup self-rising flour
  • 3/4 cup finely chopped pecans
  • 1/2 cup (1 stick) butter, softened
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper

What to Do

  1. In a medium-sized bowl, combine all the ingredients.

  2. Using your hands, knead well until a soft dough forms. Shape into an 8-inch log about 2 inches in diameter. Wrap tightly in plastic wrap and chill for about 30 minutes, until firm.

  3. Preheat the oven to 350 degree F. Unwrap and cut the log into 1/4-inch slices and place on a rimmed baking sheet that has been coated with nonstick cooking spray.

  4. Bake for 20 to 25 minutes, or until golden. Let stand for 5 minutes before removing from the baking sheet.

  5. Serve warm, or allow to cool completely then store in an airtight container until ready to serve.

    Makes about 2 dozen.
