Pass the Pate

At one time, chopped chicken liver was considered a very ethnic dish. These days, the trendy variation is called p^té and our Pass The Pate is a great spread for passing around at your next gathering.
What You'll Need
- 1 tablespoon butter
- 1 pound chicken livers
- 1 small onion, chopped
- 3 hard-boiled eggs
- 1/2 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1/4 cup heavy cream
What to Do
- Melt the butter in a medium skillet over medium-high heat. Add the chicken livers and onion and sauté for 8 to 10 minutes, or until cooked through.
- Allow to cool slightly then place in a food processor that has been fitted with its metal cutting blade; add the hard-boiled eggs, ground red pepper, and salt and process until smooth.
- While processing, pour the cream slowly through the feeder tube until the mixture is smooth.
- Transfer to a serving bowl, cover, and chill for at least 2 hours before serving.
Notes
What a perfect dish to prepare ahead of time! Sprinkle it with some chopped parsley and serve with crackers.
