Pistachio Smoked Salmon Spread

This is very rich in old-fashioned flavor but with a touch of today's lightness and freshness. Serve it with croissants, bagels, or pitas and they'll be begging you for the "secret ingredient."
What You'll Need
- 1 package (8 ounces) cream cheese, softened
- 1/4 pound smoked salmon, flaked or finely chopped
- 1/2 cup (2-1/2 ounces) pistachios, shelled and chopped (you should have 1/4 cup after chopping)
- 3 teaspoons lemon juice
What to Do
- In a bowl, beat the cream cheese with an electric mixer until fluffy.
- Add all remaining ingredients and mix well. Serve immediately or chill until ready to serve.
- Makes about 1-1/3 cups.
