Prosciutto and Melon Skewers

Prosciutto with melon is no new combination in Italian kitchens. Our improvement is to serve it up on skewers so it's lots easier to enjoy that big prosciutto taste.
What You'll Need
- 1 medium cantaloupe
- 1 teaspoon cracked black pepper (see Note)
- 6 slices (about ¼ pound) prosciutto
- 6 (6-inch) wooden skewers
What to Do
- Cut cantaloupe in half and seed it then cut each half into 4 wedges. Remove rind and cut each wedge into 3 chunks.
- In a large bowl, combine cantaloupe chunks and pepper; mix well.
- Cut each slice of prosciutto in half lengthwise then in half crosswise. Wrap a piece of prosciutto around each chunk of cantaloupe, allowing ends to overlap, and place each wrap on a skewer so the ends of the prosciutto are pierced and not hanging loose.
- Place 4 chunks on each skewer and serve, or cover and chill until ready to serve.
Note
You can buy cracked black pepper in the spice section of your supermarket or you can place whole peppercorns in a resealable plastic storage bag and crack them with a mallet. You could use ground black pepper instead, but 1/8 to 1/4 teaspoon should be enough.
