Quick Roasted Peppers

These are a must-have 'cause bell peppers are always available, usually inexpensive, and come in a range of beautiful colors. Oh, yeah - we can eat this classic standby hot or cold.
What You'll Need
- 2 tablespoons vegetable oil
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large bell peppers (2 green and 2 red), seeded and quartered
What to Do
- Preheat the oven to 450 degree F. In a medium-sized bowl, combine all the ingredients except the peppers; mix well.
- Add the peppers to the bowl and toss to coat well.
- Place the peppers on a baking sheet and roast for 20 to 25 minutes, or until tender.
Notes
These are perfect for those times when you have extra bell peppers or when you get them on sale. And for extra color and flavor, add some yellow or orange bell peppers.
