You've never had a chicken appetizer this juicy! Rancher's Buttermilk Chicken Bites are inspired by the famous Texas city of Dallas. They're even served with a memorable honey mustard barbecue sauce to boot!
What You'll Need
- 3/4 cup buttermilk
- 1 egg
- 1 cup self-rising flour
- 1 tablespoon confectioners' sugar
- 1 teaspoon paprika
- 2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup vegetable oil
- 1 cup barbecue sauce
- 1/2 cup honey
- 1 tablespoon yellow mustard
What to Do
- In a small bowl, combine buttermilk and egg; beat well. In a medium bowl, combine flour, sugar, paprika, salt, and pepper; mix well.
- Dip chicken in flour mixture then in buttermilk mixture, then in flour mixture again, coating completely.
- In a large skillet over medium heat, heat oil until hot but not smoking. Add chicken in batches and cook 4 to 5 minutes, or until no pink remains and coating is golden, stirring occasionally.
- Meanwhile, in a medium bowl, combine barbecue sauce, honey, and mustard.
- Remove chicken to a paper towel-lined platter to drain. Serve immediately with dipping sauce.
