Southwestern Black Bean Dip

This warm black bean dip is so tasty and versatile, no one will ever believe how nutritious it is! The beans are packed with protein and lots of good-for-you fiber. Have plenty of fresh veggies and pita crisps handy for healthy dipping!
What You'll Need
- 2 tablespoon olive oil
- 2 tablespoon all-purpose flour
- 2 (16 ounce) cans black beans, rinsed
- 1 3/4 cup beef broth
- 2 tablespoon chili powder
- 1 garlic clove, minced
- 1/4 teaspoon dried oregano
- 1/8 teaspoon ground cumin
- 1/2 cup (2 ounces) shredded Monterey Jack cheese
What to Do
- In a medium saucepan, heat oil over medium heat.
- Add flour and cook 2 to 3 minutes, until flour has browned, stirring frequently. Add remaining ingredients except cheese; mix well. Cook 5 to 6 minutes, until well blended and bubbling, stirring often.
- Reduce heat to low and simmer 25 to 30 minutes, or until slightly thickened. Pour into a serving bowl and top with cheese; serve with chips; serve warm.
Note
You can make this ahead of time, without adding the cheese. Just cover and store it in the refrigerator for up to 3 days. Just before serving, top with the cheese.
