Turkey Florentine Cups

Who needs bread as an appetizer base when you can use sliced turkey instead? Turkey steps in as a cup for creamy spinach and cheese in this simple appetizer that is great for parties.
What You'll Need
- 3/4 pound oven-roasted deli turkey, sliced into 12 even slices
- 1 (10-ounce) package frozen chopped spinach, thawed and well drained
- 1/2 cup (2 ounces) shredded mozzarella cheese
- 1/3 cup whipped cream cheese
- 1 tablespoon grated Parmesan cheese
- 1 tablespoon finely chopped onion
- 1/4 teaspoon garlic powder
What to Do
- Cut each turkey slice in half. Roll each piece into a cone shape and place each in 1 cup of a 24-cup mini muffin pan.
- In a medium bowl, combine remaining ingredients; mix well. Spoon a heaping teaspoon of spinach mixture into each turkey cup.
- In a 350 degree F. oven, bake turkey cups 13 to 15 minutes, or until heated through. Serve warm.

the turkey florentine cups sound delicious; will try them soon. for those watching their weight: fat-free shredded mozarella and cream cheese will work well and keep the pounds in tow. go ahead, have another (especially since white meat turkey is so low in fat and carbohydrates and the other suggested substitutions make for a delicious take on your original recipe.) chris
