Turkey Stuffed Mushrooms

Stuffed mushrooms...everybody loves 'em! (And the best part is you get so many with so little work)
What You'll Need
- 1 tablespoon vegetable oil
- 1 pound turkey breakfast sausage
- 1 package (8 ounces) cream cheese, softened
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried dillweed
- 2 to 3 tablespoons chopped scallions
- 3 pounds stuffing mushrooms, cleaned and stems removed (about 40)
- Seasoned bread crumbs for sprinkling
What to Do
- Preheat oven to 400 degrees F.
- In a large skillet, heat the oil over medium-high heat; brown the sausage, stirring to break up, and drain off excess liquid. In a medium-sized bowl, mix the browned sausage with the cream cheese, salt, pepper, dillweed, and scallions.
- Stuff the mushrooms with the sausage mixture, place on baking sheets that have been coated with cooking spray, sprinkle with bread crumbs, and bake for 25 minutes or until lightly browned.
- Transfer to a serving platter and serve warm.
- Makes about 40 pieces.
