Scottish New Year's Crisps

We can't think of a better way to welcome in the New Year than with these Scottish New Year's Crisps. They're as welcome with a glass of bubbly as they are with a glass of milk. And no, you don't have to be Scottish to enjoy these.

What You'll Need

  • 1/2 cup (1 stick) plus 2 tablespoons butter, softened
  • 1/2 cup plus 2 tablespoons sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

What to Do

  1. Preheat oven to 300 degrees F.
     
  2. In a large bowl, cream together butter and sugar, add egg, and beat until fluffy. Blend in remaining ingredients.
     
  3. Use a spatula to spread batter evenly into a sprayed jelly roll pan; smooth the top. (Batter will be firm.) Draw fork tines over dough to make straight shallow lines going both horizontally and vertically, creating a crisscross pattern. Bake 30 minutes or to a pale golden color.
     
  4. Remove from oven and immediately cut into strips. Let cool in pan on a wire rack; when cool, remove carefully. Store in an air-tight container.
     

Notes

If you don't have a jelly roll pan, you could use a 9- x 13-inch glass baking dish.
