Sopaipillas

South of the border they call these fried pastry squares sopaipillas. In my kitchen, my grandchildren call them their favorite crunchy after-school snack!
What You'll Need
- 2 1/4 cup all-purpose flour, divided
- 2 tablespoon vegetable shortening
- 2 teaspoon baking powder
- 1 teaspoon salt
- 2/3 cup lukewarm water
- Vegetable oil for frying
- 1/2 cup honey
What to Do
- In a medium-sized bowl, combine 2 cups flour, the shortening, baking powder, and salt; mix with a spoon until crumbly. Slowly add the water and stir until the mixture comes away from the sides of the bowl. Cover and chill for 30 minutes.
- Sprinkle a large cutting board with the remaining 1/4 cup flour and roll the dough out to 1/8-inch thickness. Cut into 2-inch squares.
- In a large soup pot or a deep fryer, heat 1 inch of oil over medium-high heat until hot but not smoking. Fry the dough squares in the hot oil for 3 to 4 minutes, or until the dough is puffy and golden, turning halfway through the cooking. Be careful: the oil is very hot. Drain on paper towels, then stack on a plate and drizzle with honey.
Makes about 4 dozen.
