Beef 'n' Peppers

The marinade is the secret to this recipe. The way these citrus and soy flavors "marry" with the meat tells us it's gonna be a winner every time!
What You'll Need
- 1/3 cup soy sauce
- 4 tablespoons lime juice
- 3/4 cup orange juice
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 2 tablespoons sugar
- 1 1/2 pound beef top or bottom round steak, cut into 1/2-inch strips
- 2 red or green bell peppers, cut into 1/2-inch strips
- 1/4 cup chopped shallots or onion
- 2 teaspoons cornstarch
What to Do

In a medium-sized bowl, combine soy sauce, lime juice, orange juice, garlic powder, black pepper, and sugar; mix until sugar is dissolved. Place beef into marinade and toss to coat. Cover and chill at least 4 hours or overnight. Reserve 2/3 cup of marinade and discard remaining marinade.

Coat a medium-sized skillet or a wok with cooking spray and heat over medium-high heat. Cook meat 8 to 10 minutes or until browned, stirring frequently.

Add bell peppers and shallots and cook an additional 4 to 6 minutes, or until peppers are just tender.

Reduce heat to medium. Add cornstarch to reserved marinade; mix well and slowly add to skillet. Bring to a boil, stirring constantly. Cook about 2 minutes, or until liquid thickens and turns glossy.
Notes
When we need a super-quick dinner, we serve this over hot cooked brown or white rice.
