Chilled Roasted Tenderloin

Roasted tenderloin so tender it melts in your mouth... Sure, it's a little more expensive, but don't you deserve it once in a while?
What You'll Need
- 2 1/2 pounds beef tenderloin, trimmed
- 1 tablespoon vegetable oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 6 hard rolls
What to Do
- Preheat the oven to 350 degrees.
- Place the tenderloin on a large rimmed cookie sheet that has been coated with cooking spray and set aside.
- In a small bowl, combine the remaining ingredients except the rolls and rub the mixture over the entire roast. Cook for 35 to 40 minutes for medium-rare or until desired doneness.
- Thinly slice the meat across the grain. Cover and chill for at least 2 hours. Serve cold on the rolls topped with Horseradish Sauce.
Notes
: A whole tenderloin of beef usually weighs between 4 and 7 pounds, but you can usually ask the butcher to cut a piece as large or as small as you need.
