What You'll Need
- 1 (4-1/2-pound) eye-of-round roast
- 1 (4-ounce) jar Chinese sweet-hot mustard
- 3 tablespoon olive oil
- 2 cloves garlic, pressed
- 2 teaspoon soy sauce
- 1 teaspoon Worcestershire sauce
- 2 pound baby potatoes
What to Do
- Place roast on an 11- x 18-inch piece of heavy-duty aluminum foil.
- Combine mustard and next 4 ingredients; stir well. Spread over roast. Fold foil over roast to seal. Place in a shallow roasting pan coated with nonstick cooking spray. Chill at least 3 hours or overnight.
- Preheat the oven to 450 degrees. Remove roast from foil; place in roasting pan. Cover and bake 30 minutes. Arrange potatoes around roast. Bake, uncovered, 30 minutes or until potatoes are tender and a meat thermometer inserted in roast registers 145 degrees (medium-rare). Cover and let stand 15 minutes; slice roast.
