Family Reunion Brisket

In the South there are just as many reasons to get the whole gang together as there are yummy dishes to enjoy! Here's one that goes a long way with a crowd.
What You'll Need
- 8 cups water
- 2 large onions, quartered
- 1 cinnamon stick
- 1/2 teaspoon whole cloves
- 1 teaspoon salt
- 1 4- to 5-pound beef brisket
- 1 1/2 cup firmly-packed light brown sugar
- 1/2 cup apple juice
- 1/3 cup prepared yellow mustard
What to Do

In a large heavy pot, combine water, onions, cinnamon stick, cloves, and salt over high heat. Add brisket fat side up and bring to a boil. Reduce heat to medium, cover, and cook 2 to 2-1/2 hours, or until brisket is fork-tender.

Preheat broiler. Remove brisket from pot and place in a roasting pan that has been lined with aluminum foil and coated with cooking spray.

In a medium bowl, combine brown sugar, apple juice, and mustard; mix well. Coat brisket with brown sugar mixture and broil 3 to 5 minutes, or until sugar melts and mixture is bubbly.

Slice across grain and serve with sauce from pan.
