What You'll Need
- 1 (1-pound) flank steak
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1/2 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 (8-inch) flour tortillas
- 1 1/2 cup thinly sliced green, red, or yellow bell pepper
- 2 small onions, sliced
- 1 tablespoon vegetable oil
- 1 tablespoon lime juice
- 1/2 cup salsa verde (tomatillo salsa) or salsa
- 1/4 cup sour cream
What to Do
- Cut steak diagonally across grain into thin strips. Combine cumin and next 4 ingredients in a large heavy-duty, zip-top plastic bag; add steak. Seal and shake to coat.
- Heat tortillas according to package directions; keep warm.
- Remove steak from plastic bag, discarding seasoning mixture. Cook steak, pepper slices, and onions in hot oil in a large skillet 6 minutes, stirring constantly, or until steak is done. Remove from heat; stir in lime juice.
- Spoon meat mixture evenly down center of tortillas, and fold up. Serve with salsa verde and sour cream.
