Grilled 'Bello Burgers

You won't miss any beef in these hearty Portobello burgers! These mushrooms have huge caps that have a meaty flavor and texture.
What You'll Need
- Cooking spray
- 8 (4-inch) Portobello mushrooms
- 4 (1/4-inch) sliced red onion
- 1/3 cup balsamic vinaigrette
- 1/4 cup mayonnaise
- 2 tablespoons chopped fresh basil (see note)
- 4 kaiser sandwich rolls
- 4 slices provolone cheese
- 4 (1/4-inch) slices tomato
- 4 green leaf lettuce leaves
What to Do
- Spray cold grill rack with cooking spray. Preheat the grill to medium-high heat (350 degrees to 400 degrees). Place mushrooms and onion slices on grill rack; brush half of vinaigrette over mushrooms. Grill vegetables, covered, 5 minutes on each side or until tender, brushing mushrooms with remaining vinaigrette when turned.
- Meanwhile, combine mayonnaise and basil; set aside.
- To serve, place 1 mushroom on bottom half of each roll. Top with provolone cheese, grilled onion slices, tomato slices, and lettuce leaves. Spread mayonnaise mixture evenly on each remaining roll half; place top of bun on lettuce. Serve immediately.
Notes
To chop fresh basil, tightly roll leaves, and cut with a knife or kitchen shears.
