Lime Pepper Kebabs

People everywhere love cooking their favorite foods together on a skewer, so how 'bout giving this colorful Mexican-style kebab a try?
What You'll Need
- 1/4 cup lime juice
- 1/4 cup olive oil
- 2 tablespoons honey
- 2 teaspoons black pepper
- 1 1/4 pound beef top or bottom round, cut into 24 one-inch cubes
- 6 fresh jalapeño peppers
- 2 frozen ears of corn on the cob, thawed, each cut into 6 equal-sized pieces (see Note)
- 1 large red bell pepper, cut into 12 chunks
- 6 wooden or metal skewers
What to Do
- In a large bowl, combine the lime juice, olive oil, honey, and black pepper; mix well. Add the beef and toss to coat. Cover and chill for 4 to 6 hours, or overnight.
- If using wooden skewers, soak them in warm water for 20 minutes. Preheat the broiler.
- Thread each skewer alternately with a jalapeño pepper, 2 pieces of corn and bell pepper, and 4 pieces of beef. Place the skewers on a baking sheet that has been coated with nonstick vegetable spray. Broil for 8 to 10 minutes for medium, or to desired doneness, turning halfway through the broiling. Serve immediately.
Notes
You can use 2 cooked fresh ears of corn on the cob instead of frozen, if you prefer. Just cut them into 1-inch rounds. And if you'd like to grill these, go ahead. Cook them until the beef reaches desired doneness.
