Mediterranean Beef Roll-Ups

Roll up something tasty with our recipe for Mediterranean Beef Roll-Ups! We marinate thinly cut steak in flavorful Greek dressing before rolling it up with fresh spinach and creamy feta cheese. The results are so delicious!
What You'll Need
- 4 thin-cut top sirloin steaks (about 1-1/4 pounds total)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup fresh spinach
- 1/2 cup crumbled feta cheese
- 3/4 cup Greek salad dressing
- 1 tablespoon olive oil
What to Do
- Evenly sprinkle steaks with garlic powder, salt, and pepper. Top evenly with spinach and feta cheese. Roll up and place a toothpick in center of each to secure.
- Place roll-ups in a shallow dish. Pour dressing evenly over roll-ups and let marinate 10 minutes.
- In a large skillet over medium heat, heat oil until hot. Remove roll-ups from marinade, reserving marinade, and cook beef roll-ups 5 to 6 minutes, or until browned on all sides, turning partway through cooking. Reduce heat to low, add marinade to skillet, cover, and simmer 20 to 25 minutes, or until beef is fork-tender. Remove toothpicks, slice roll-ups, and serve.
