What You'll Need
- 1 (3- to 4-pound) beef bottom round roast
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon dried thyme leaf
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
What to Do
- Preheat the oven to 350°F. Place the roast fat side up on a roasting rack that has been coated with cooking spray. Place the rack in a large roasting pan.
- In a small bowl, combine the remaining ingredients; mix well. Rub the spice mixture over the entire roast, covering completely.
- Roast for 1-1/4 to 1-1/2 hours or until a meat thermometer registers 150°F. for medium-rare, or until desired doneness beyond that. Makes about 3 pounds of cooked roast beef.
Notes
This roast beef is perfect for French Double Dippers and Philadelphia Cheese Steak Sandwiches. It will keep in the fridge for 3 or 4 days, so slice it very thin as you need it. You can also freeze it in 1-pound packages for future use.
