Simmering Steak and Veggies

"Simmering" means cooking over low heat. In this recipe, simmering means lots of long-cooked flavor and tenderness.
What You'll Need
- 2 tablespoons vegetable oil
- 3 pounds beef chuck steak
- 1 can (15 ounces) tomato sauce
- 1 cup water
- 1/2 teaspoon ground allspice
- 2 teaspoons salt
- 1 teaspoon black pepper
- 6 medium-sized white potatoes, peeled and sliced about ½ inch thick
- 3 medium-sized tomatoes, sliced about ½ inch thick
- 3 medium-sized onions, sliced about ½ inch thick
What to Do
- In a large deep skillet, heat the oil over medium heat. Brown the steak for 2 minutes per side. Add the tomato sauce, water, allspice, salt, and pepper. Cover and reduce the heat to low; simmer for 30 to 35 minutes.
- Add the remaining ingredients and simmer for 45 more minutes, or until the potatoes are cooked through and the meat is fork-tender.
- Serve the meat with the veggies and pan juices.
Notes
Some butchers call this cut a chuck steak, while others refer to it as a chuck roast, so don't be confused. No matter what it's called, it'll still have that lip-smacking goodness.
