Warm Beef and Penne Salad

Warm salads have become really popular, and this one's a sure hit 'cause of the creamy, rich flavors. Oh, yeah - then there's the added zip of tongue-tingling horseradish....That makes it unforgettable!
What You'll Need
- 1 pound penne pasta
- 4 tablespoons olive oil, divided
- 1 large red onion, cut into thin wedges
- 1 pound boneless beef chuck steak, cut into ¼-inch strips
- 1 cup mayonnaise
- 1/2 cup sour cream
- 3 tablespoons prepared horseradish, drained
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 plum tomatoes, chopped
What to Do
- In a 6-quart soup pot, prepare the pasta according to the package directions; drain, rinse, and drain again; set aside in the colander.
- In the same pot, heat 1 tablespoon oil over medium-high heat and sauté the onions and steak for 4 to 5 minutes, or until the steak is browned, stirring occasionally.
- In a large bowl, combine the mayonnaise, sour cream, horseradish, salt, pepper, and the remaining 3 tablespoons olive oil. Stir until well combined, then add the beef mixture, pasta, and tomatoes; toss until well coated. Serve warm.
Notes
You can serve this as a warm salad, but some people say they like it even better after it has chilled for a couple of hours. The choice is yours!
