"What's Your Beef" Tenderloin

When we were growing up, we ate lots of beef at home. It was usually ground beef or less-expensive steak cuts. Boy, is this a nice change! Once you try this melt-in-your-mouth beef, there won't really be any need to think twice when somebody asks, "What's your beef?"
What You'll Need
- 2 1/2 pounds beef tenderloin, trimmed
- 1 tablespoon vegetable oil
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
What to Do
- Preheat oven to 350 degrees F.
- Place tenderloin on a large rimmed cookie sheet that has been coated with cooking spray and set aside.
- In a small bowl, combine remaining ingredients and rub over meat.
- Cook 35 to 40 minutes for medium-rare or until desired doneness.
Notes
A whole tenderloin of beef will weigh between 4 and 7 pounds, but today many supermarkets are selling tenderloin in 2- to 3-pound pieces.

i would like to use a venison tenderloin, would i have to make adjustments to recipe?

I know what you mean, irmcl!! However, when I find Beef Tenderloin in my local grocery store (a rarity, regretfully) I have chosen to spend the money and buy the whole tenderloin (or at least half, if the butchers offer it that way, and then after trimming it (if needed) cut it into a number of 6 to 12 oz filet mignon steaks instead of baking it whole. I package them up 2 fairly equal sizes to a package and freeze them, to be used for very special occasions, such as Anniversaries or Birthdays..

Beef Tenderloin is a very expensive dish. Cannot afford .

See my note for special occasions ... It is still much less expensive to buy an excellent (albeit expensive) cut of meat and cook it yourself at home for your wedding anniversary, or your spouse's birthday, than it is to go out to eat at a fancy restaurant. AND ... you can control your calories by doing the cooking at home, if that's an issue.

Suggest the over temp be set at 425 and that the ingredients for the rub be multiplied by 4. Used with a 2.25 lb tenderloin and with the oven temp at 425, it took about 50 minutes for medium doneness.
