What You'll Need
- 3 tablespoon vegetable oil, divided
- 1 (2-1/2- to 3- pound) boneless beef chuck roast
- Salt for sprinkling
- Black pepper for sprinkling
- 8 ounce peeled fresh or frozen pearl onions
- __BLANK__
- 3 clove garlic, minced
- 2 1/2 cup beef broth
- 1/4 cup water
- 2 tablespoon all-purpose flour
- __BLANK__
- 4 cup shredded coleslaw
- 2 tablespoon red wine vinegar
- 3 cup chopped kale
- 8 ounce cooked cavetelli pasta, or your favorite tube pasta
What to Do
- In a Dutch oven or soup pot over high heat, heat 1 tablespoon oil until hot. Sprinkle roast with salt and pepper and sear 4 to 6 minutes, browning on all sides. Add onions, garlic, and broth to meat; bring to a boil. Cover, reduce heat to low, and simmer 1-1/2 to 2 hours or until meat is pull-apart-tender. Remove to a platter; cover to keep warm.
- In a small bowl, whisk water and flour. Slowly stir into pan juices and simmer gravy 3 to 5 minutes or until thickened.
- In a medium bowl, combine coleslaw, vinegar, and 1 tablespoon vegetable oil; mix well and set aside.
- In a large skillet over medium heat, heat remaining 1 tablespoon vegetable oil until hot. Add kale and heat 3 minutes, stirring occasionally. Stir in pasta and heat an additional 5 minutes or until heated through.
- With a fork, chunk roast into pieces and serve over pasta and kale. Top with gravy and serve with coleslaw.
Test Kitchen Tip
- If you’d like to sprinkle some toasted bread crumbs over the gravy, make your own by melting 1 tablespoon butter in a small skillet over medium heat. Add 2 tablespoons bread crumbs and heat until golden brown, stirring occasionally.
