What You'll Need
- 2 tablespoons butter, divided
- 1/2 cup chopped onion
- 1 1/2 cup biscuit baking mix
- 1 cup (4 ounces) shredded Cheddar cheese, divided
- 1/2 cup milk
- 1 large egg, beaten
- 1 tablespoon sesame seeds, toasted
What to Do

Preheat the oven to 400 degrees. Melt 1 tablespoon butter in a small skillet over medium-high heat. Add onion; sauté 3 minutes or until tender.

Combine onion mixture, biscuit mix, and 1/2 cup cheese in a medium bowl; make a well in center of mixture. In a small bowl, combine milk and egg; add to dry ingredients, stirring just until moistened. Spoon batter into greased muffin pans, filling half full. Sprinkle with remaining 1/2 cup cheese and the sesame seeds. Dot with remaining 1 tablespoon butter.
- Bake 13 minutes or until muffins are golden. Remove from pans immediately.
Notes
For muffins with a bit of heat, substitute 1 cup of Monterey Jack cheese with peppers for the Cheddar cheese.
