Flour Tortillas

No ready-made tortillas on hand? No problem! Yeah, these are a little more work than store-bought, but they're worth it 'cause with a few off-the-shelf ingredients, you can have fresh, warm, homemade tortillas in minutes.
What You'll Need
- 2 cups all-purpose flour
- 3/4 teaspoon salt
- 1/4 cup vegetable shortening
- 1/2 cup warm water
What to Do
- In a medium-sized bowl, combine the flour and salt. With your fingertips, mix in the shortening. Add the water and mix until a dough forms. Knead the dough on a floured surface for about 3 minutes, or until smooth and elastic.
- Divide into 8 equal pieces and shape into balls. Place each ball between 2 sheets of waxed paper, and, using a rolling pin, roll each into an 8- to 10-inch circle.
- Heat a large skillet over medium-high heat and cook a tortilla for 30 to 40 seconds until the top is bubbly and the bottom is flecked with brown spots. Flip the tortilla over and cook for 20 more seconds until the second side is flecked with brown spots.
- Remove to a covered plate and repeat with the remaining tortillas. Serve warm.
Notes
After rolling out the dough, keep the uncooked tortillas between sheets of waxed paper until you're ready to cook them. That way, they won't stick together.
