Ginger Scones

You may think these scones are fancy schmancy, but they're so-o-o easy - and, chances are you'll already have all of the ingredients right in your kitchen.
What You'll Need
- 2 3/4 cup all-purpose flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 3/4 cup butter
- 1/3 cup chopped crystallized ginger (see note)
- 1 cup milk
What to Do
- Preheat the oven to 400 degrees. Combine first 4 ingredients in a large bowl; cut butter into flour mixture with a pastry blender until crumbly. Stir in ginger. Add milk, stirring just until dry ingredients are moistened.
- Turn dough out onto a lightly floured surface, and knead with floured hands 10 to 15 times. Pat or roll dough to 3/4-inch thickness on a lightly greased baking sheet; shape into a round, and cut dough into 8 wedges with a lightly floured knife, cutting into, but not through, dough.
- Bake 18 to 22 minutes or until just golden. Cool slightly on a wire rack. Serve warm.
Notes
Here's a tip: Use cold butter to get a flaky result every time. Find crystallized ginger in the spice section of the supermarket. It adds texture and flavor to these scones that come out of the oven just beggin' to be savored with a cup of hot tea or coffee.
