What You'll Need
- 1 2/3 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sugar
- 2 teaspoon poppy seeds
- 1 large egg, lightly beaten
- 3/4 cup milk
- 1 teaspoon grated lemon rind
- 3 tablespoon fresh lemon juice
- 3 tablespoon butter, melted
- 1/3 cup frozen lemonade concentrate, thawed and undiluted
- 1 tablespoon powdered sugar
What to Do
- Preheat the oven to 375 degrees. Combine first 5 ingredients in a large bowl; make a well in center of mixture.
- Combine egg and next 4 ingredients; add to dry ingredients, stirring just until moistened. Spoon batter into 3 (3-1/2-inch by 6-inch) disposable loafpans coated with nonstick cooking spray.
- Bake 20 to 22 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pans on a wire rack 5 minutes.
- Combine lemonade concentrate and powdered sugar. Spoon over warm cake.
Makes 3 loaves.
