There's no shortage of chocolate in this easy recipe for Mini Double Chocolate Muffins. That's because we combine cocoa and chocolate chips to give them a rich flavor that's pairs perfectly with your morning coffee!
What You'll Need
- 1 1/2 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/2 cup unsweetened cocoa
- 2 eggs, beaten
- 3/4 cup milk
- 1 stick butter, melted
- 1/3 cup mini semisweet chocolate chips
What to Do
- Preheat oven to 350 degrees F. Place paper liners in 3 (12-cup) mini muffin tins.
- In a large bowl, combine flour, baking powder, salt, sugar, and cocoa. Add eggs, milk, and butter; mix well with a spoon. Add chocolate chips and mix just until combined. (Batter will be stiff.) Fill each muffin cup with batter, distributing evenly.
- Bake 15 to 18 minutes, or until a toothpick inserted in center comes out clean. Remove muffins from pan and cool on a wire rack.
