Mint Laced Popovers

If you've ever taken a bite of a popover, you'll always remember it. They're a real surprise - so light and airy - that's why they're perfect for a spring menu! And I bet you've never had any that have been laced with the fresh taste of mint! Wait till you try these puffy alternatives to ordinary biscuits!
What You'll Need
- 2 eggs
- 1 cup milk
- 2 tablespoons vegetable oil
- 1 cup all-purpose flour
- 2 tablespoons chopped fresh mint leaves
- 1/2 teaspoon salt
What to Do
- Preheat the oven to 425 degrees. Coat 6 muffin cups with cooking spray.
- In a large bowl, combine all the ingredients, mixing with a spoon until just blended (a few lumps may remain).
- Immediately pour into the muffin cups and bake for 30 to 35 minutes, or until golden and puffy. Serve immediately.
Notes
You may want to make more than one batch of these, 'cause served hot with butter, they pop out of sight before you know it!
