Nutty Wheat Loaf

Bread has a reputation of a not-so-great-for-you food, but we love this Nutty Wheat Loaf because it breaks that mold! Packed with nutritious nuts and spices, this bread is good and good for you!
What You'll Need
- 1 1/4 cup all-purpose flour
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 cup packed dark brown sugar
- 1/2 cup coarsely chopped walnuts
- 1/2 cup wheat germ
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 large eggs, lightly beaten
- 1 1/4 cup milk
- 1/2 cup butter, melted
What to Do
- Preheat the oven to 350 degrees. Combine first 9 ingredients in a large mixing bowl; stir well.
- Combine eggs, milk, and butter; add to dry ingredients, stirring just until dry ingredients are moistened. Spoon batter into a greased and floured 4-1/2- x 8-1/2-inch loaf pan.
- Bake 55 to 60 minutes or until a toothpick inserted in center comes out clean. Cool loaf in pan on a wire rack.
Notes
Baking powder is what makes quick bread quick, it eliminates the need for bread to rise. But for it to work, baking powder needs to be fresh. Most brands have an expiration date on the can. If there isn't a date, here's a quick test for freshness: Add a teaspoon of baking powder to a half cup of hot water. The mixture should foam vigorously. If it doesn't, throw away the can!!
