What You'll Need
- 3/4 cup brown sugar
- 3 eggs
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 (8-ounce) can crushed pineapple, with juice reserved
- 2 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 1/2 cup shredded carrots
- 1 apple, cored and shredded
- 1/4 cup chopped walnuts
What to Do
- Preheat oven to 375 degrees F. Coat a 12-cup muffin tin with cooking spray.
- In a large bowl, combine brown sugar, eggs, oil, vanilla, pineapple, and reserved juice; whisk until well combined. Add flour, baking powder, baking soda, cinnamon, and salt; whisk well. Fold in carrots, apple, and walnuts; mix well. Evenly divide batter into muffin cups.
- Bake 20 to 25 minutes, or until a toothpick comes out clean. Enjoy warm, or let cool.
