Pear Muffins

Muffins are such a versatile food, you can add just about anything to 'em to make a delicious treat. Here, we made pears the star of the show with these Pear Muffins - a perfect treat for any time of day!
What You'll Need
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 egg, beaten
- 1 fresh pear, cored and chopped (about 1-1/2 cups)
- 3/4 cup all-purpose flour
- 3/4 cup cornstarch
- 1/2 cup whole wheat flour
- 1/2 cup rolled oats
- 1/3 cup sugar
- 1/4 cup raisins
- 2 teaspoons baking powder
- 1/2 teaspoon salt
What to Do
- Preheat oven to 375 degrees. Combine milk, vegetable oil and egg together in a small bowl. Add chopped pears.
- In a large bowl, combine the remaining ingredients; mix well. Add pear mixture to flour mixture, stirring just until blended.
- Coat a 12-muffin tin with non-stick vegetable spray. Portion batter into sprayed cups and bake for 35 minutes or until browned.
Notes
Best served warm with butter, cream cheese or jam.
