Pecan Mini Muffins

These muffins taste like pecan tassies but are easier to prepare because there's no separate crust.
What You'll Need
- 1 cup packed brown sugar
- 1/2 cup butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- 1/2 cup all-purpose flour
What to Do
- Preheat oven to 375 degrees F. Combine first 4 ingredients in a bowl, beating with a wire whisk until smooth. Stir in pecans and flour.
- Spoon batter into lightly greased miniature (1-3/4-inch) muffin pans, filling to within 1/8-inch from top.
- Bake 12 minutes or until lightly browned. Cool in pans on wire racks 1 minute. Remove from pans; cool completely on wire racks.
