Quick, yes, but packed with all the old-fashioned flavor you'll love. Now, it's not a regular-type bread. It's more like a cakey bread, so slice it thick and smear it with your favorite spread, such as cream cheese, honey, jam, whatever. Mmmm ... you can almost smell it baking!
What You'll Need
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 3/4 teaspoon dried sage, crushed
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs
- 1 cup buttermilk
- 3 tablespoons olive oil
- 1/2 cup (2 ounces) shredded Cheddar cheese
- 1/2 cup medium pitted ripe olives, drained and sliced
What to Do
- Preheat oven to 350°F.
- In a large bowl, mix together the flour, sugar, baking powder, sage, baking soda, and salt. In another bowl, combine the eggs, buttermilk, and olive oil; beat to mix well. Add egg mixture to flour mixture, stirring just until moistened; fold in the cheese and olives. Pour batter into a greased 9 x 5-inch loaf pan.
- Bake for about 45 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan for 10 minutes; remove from pan and cool on wire rack. Wrap and chill overnight before slicing.
- Makes 1 loaf.
