Sausage and Cheddar Muffins

Some people like 'em sweet, but we like 'em savory! Our simple bread recipe for Sausage and Cheddar Muffins has the makings for a hearty supplement to our favorite homemade soup. Using some of our favorite winter ingredients like onion, cheese, and pork sausage, this biscuit baking mix recipe is a real winner.
What You'll Need
- 3 tablespoons butter
- 1 medium-sized sweet onion, finely chopped
- 1 1/2 cup biscuit baking mix
- 2 cups (8 ounces) shredded Cheddar cheese, divided
- 1/2 cup milk
- 1 large egg
- 1/2 pound hot or mild ground pork sausage, cooked and crumbled
What to Do

Preheat the oven to 425 degrees. Melt butter in a skillet over medium-high heat; add onion, and sauté 3 to 5 minutes or until tender; set aside.

Combine biscuit mix and 1 cup cheese in a large bowl; make a well in center of mixture.

Stir together milk and egg, blending well; add to cheese mixture, stirring just until moistened. Stir in onion and sausage. Spoon into lightly greased muffin pans, filling two-thirds full. Sprinkle with remaining 1 cup cheese.
- Bake 18 minutes or until golden. Let stand 2 to 3 minutes before removing from pans.
Notes
If you'd like, you can use this recipe to make mini muffins. Spoon batter into lightly greased miniature (1-3/4-inch) muffin pans. Bake at 425 degrees for 14 minutes or until golden. Makes 2-1/2 dozen li'l poppers!
