What You'll Need
- 1 cup sugar
- 1/2 cup applesauce
- 1/2 cup vegetable oil
- 2 eggs
- 2 teaspoon vanilla extract
- 2 1/2 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cup shredded zucchini
- 1 cup sweetened dried cranberries
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray.
- In a large bowl with an electric mixer on medium speed, beat sugar, applesauce, oil, eggs, and vanilla until well blended.
- In a medium bowl, combine flour, baking soda, baking powder, cinnamon, and salt. Gradually add flour mixture to egg mixture and continue beating just until blended. With a spoon, stir in zucchini and dried cranberries. Pour into loaf pan.
- Bake 75 to 80 minutes, or until a wooden toothpick inserted in center comes out clean. Let cool 20 minutes, then remove to a wire rack to cool completely.
