New York Easy Cheesecake

There's no cheesecake like New York cheesecake. And there's no New York-style cheesecake recipe as easy as this. (Two more great reasons to love New York!)
What You'll Need
- 3 (8-ounce) packages cream cheese, softened
- 1 cup sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 2 prepared (9-inch) graham cracker pie crusts
- TOPPING
- 3 tablespoon sugar
- 1 pint (16 ounces) sour cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon lemon juice
What to Do
- Preheat oven to 375 degrees F.
- In a large bowl, blend the cream cheese and 1 cup sugar with an electric mixer. Add eggs, one at a time, then 1 teaspoon of vanilla; mix well. Distribute mixture evenly between the pie crusts.
- Bake 40 to 45 minutes, or until firm. Remove from the oven and allow to cool 5 minutes.
- Meanwhile, in a medium bowl, beat the topping ingredients until well blended. Pour evenly over the pies and bake an additional 5 minutes.
- Cool, then refrigerate 6 hours before serving.
